in 3ds max you can use the slice plane modifier,
if you don't have that.. most 3d programs have adjustable clipping planes
for the camera, the only problem with this is that it can make solids
appear
hollow, but you can manually fill in the hollow bits in a paint program.
the advantage is that it's otherwise very fast
